Winemaking Practices:
• Grapes grown in the Monticello region of Virginia - crushed and aged in Charleston, SC
• Muscadine Grapes grown on Wadmalaw Island, South Carolina - crushed and aged in Charleston, SC
• Apples varieties grown in the Blue Ridge Mountains of Western South Carolina and North Carolina - Apple Wines produced and aged in Charleston, SC
• 100% pure grape free flow juice – No harsh pressing of the skins after initial fermentation. This preserves the delicate flavor profile derived from the microbiotic skin fermentation by avoiding the extraction and incorporation of substandard astringent juice that pressing can produce. No additives – No yeast, water, sugar, concentrates, chemicals or otherwise.
• Spontaneous microbiotic fermentation led by naturally occurring Lactobacillus and other native microbes. No yeast or cultures added whatsoever – commercial or otherwise.
• Microbiotically fermented on the skins for 8-9 days to extract beneficial compounds from the seeds and skins, enhancing the wine’s ideal taste and color profile, while also supercharging the wine’s nutritional profile as supported by scientific studies. (Studies shown on website)

(We completely avoid stainless steel, which contains Iron, Chromium, Nickel and other metals that leach into the liquids they contain. This can affect not only taste and wine integrity, but health also.)
• Bottled in pure, clear glass to avoid potential leaching of heavy metals such as chromium and cadmium, which are commonly used to create the coloring in wine bottles.
• Sealed with Vinolok glass closure which eliminates cork taint risk and preserves the incredible taste and microbial integrity. (Studies indicate this closure maintains wine integrity over extended periods, making it suitable for long-term aging up to and beyond 15 years. Additionally, spontaneous microbiotic fermentation benefits from little to no oxygen ingress during aging, for which this closure is ideal.)

Desirability and Benefits:
• Microbial-Led Fermentation: Spontaneously fermented by Lactobacillus and natural microbial populations which are the preserving microbiotic organisms - and NO yeast, either commercial or otherwise. Yeast comes from the mold and fungus family which means anti-life or otherwise known as anti-biotic (biotic means life) Natural spontaneous fermentation is pro-biotically done which means supporting or preserving life. This wine is entirely different.

• Clear Glass by Design: Transparency is both literal and symbolic — no heavy metal risk from coloring agents in wine bottles, with the pure wine proudly on display. (Concerns of so called “light strike” during aging which is supposedly caused by light exposure over a very long timeframe does not affect a natural spontaneous microbiotic fermentation. Meanwhile, the heavy metals from the coloring agents in dark bottles are of much more drastic concern to the taste and healthfulness of any wine. This is completely ignored in the wine industry.
